Walnut Noodles with Leek Mousse & Goat Cheese

Ingredients

For the Walnut Noodles
1 2/3 cups semolina
1/2 cup walnut four
1 tbsp. walnut oil
5/6 cup water
salt
For the Port Wine Leek Cream
2 1/2 cups leek (cubed)
1 small clove of garlic
1/8 cup shallot (cubed)
3/4 cup white port wine
1/3 cup butter
1 tbsp. olive oil
1 tbsp. créme fraîche
1/2 cup vegetable broth
For the Garnishing
goat cheese
California walnuts (chopped)

Description

For all pasta lovers, this variation with walnuts is a guaranteed highlight. Topped off with aromatic sweet port wine leek cream.

Preparation

Walnut Noodles

Knead all ingredients well for approx. 10-12 minutes. Then let stand for 30 minutes.
 
Port Wine Leek Cream

Cook leek, garlic and shallots in some butter and olive oil until soft and then deglaze with port wine. Salt lightly and reduce liquid by half. Add vegetable broth and let simmer until leek is soft. Puree with a hand blender until smooth and season with salt, pepper and lemon juice.

Cook walnut noodles in salted boiling water, drain and stir into leek cream with a dollop of butter until glazed. Using utensils, twirl noodles into portions and add sauce. Garnish with goat cheese and chopped walnuts.
