California Walnut Ice Cream

Ingredients

For 4oz portion
32.9 % California walnuts (soaked for 2 hours or overnight in water)
52.6 % walnut milk
6.6 % brown sugar
3.9 % maple syrup
1.1 % instant coffee
2 % MCT oil
0.7 % vanilla
0.4 % salt
Garnish with chopped California walnuts

Description

This walnut ice cream made from California walnuts is flavored with hint of maple and a hint of coffee.

Preparation

Drain walnuts and place in a blender with walnut milk, brown sugar, maple syrup, instant coffee, oil, vanilla and salt. Blend until very smooth. Cover and refrigerate until well-chilled.

Place into the bowl of an ice cream maker and freeze until firm.

Transfer to a 1-quart container and store in the freezer.

Scoop into bowls and garnish with chopped walnuts.
